Rare Sushi Ingredients - Have you ever heard of Shio Ebi, The Jewel of Toyama?

Have you ever heard of Shiro Ebi, aka Shira Ebi?

If you haven't, you are not alone. Many Japanese probably never heard of it either because Shira Ebi is caught in only in Toyama Bay between April and November.


It's about 6-7cm (2-2.5inches) in length, living deep-sea about 100-600meters. It has a slightly pink color when alive and because of this, it is often referred to as the Jewel of Toyama.

Because Shiro Ebi deteriorates quickly, it was only consumed in the Toyama and neighborhood regions until recently. Thanks to the advancement of freezing technology and delivery logistics, you can buy Shira Ebi online in Japan now.

If you are going to eat Shira Ebi, Summer is said to be the most popular time.


It has a very sweet flavor like sweet shrimp.


I have a chance to try this shrimp when I visited Toyama during summer, and it was just fantastic!
